This massive filet provides you with a ton of clean quality protein while giving you a ton of meat! The thickness of the fish gives you a ton of bite while the mild flavor gives you an amazing platform to enhance with flavors on flavors!!
Ingredients
Large Alaskan Cod Filet
3 Organic Lemons, zest 1 of the lemons
1 cup of fresh dill… sprigs as well… pull 2 tbsp of fresh dill leaves for the fish
4 garlic cloves
1 tsp Red Mill Real Salt
2 tbsp Extra Virgin Olive Oil, divided… cab sub out for Macadamia Nut Oil for better fat content
Recipe
Start by pat drying the fish and preheating a grill to medium-low heat
Zest 1 of the lemons, then slice all the lemons into thin slices
Sprinkle the fish with the salt
Top the fish with the lemon zest, grated garlic, the 2tbsp of dill, salt and then a few of the extra slices of lemon
Spray the grill with avocado oil spray, then lay the lemons out on the grill, covering enough of the area to rest the fish on… place the dill sprigs on the lemon
Place the fish on the lemon & dill bed, drizzle with 1tbsp of the oil… cook for about 12-15 minutes until flaky
Pull the cod from the grill when cooked and drizzle the remaining 1tbsp of oil over the top
Let rest for a few minutes, then serve up!
*For an added boost of flavor you can omit the oil and put 1/2 tbsp of grass-fed butter on top of each lemon that is placed on top of the cod filet
